Super tasty, plant-based gingerbread protein cookies. We absolutely love these! You can't even tell they are protein cookies; they are soft, sweet, and perfect for Christmas (or anytime!).
Ingredients

1.5 scoops (50g) Thrive Vanilla Plant Protein
- 5 tbsp of natural calorie-free sweetener (stevia, monkfruit, or erythritol)
- 4 tbsp all-purpose flour
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- A pinch of nutmeg
- 3 tbsp vegan butter
- 1 flax egg (3 tbsp water mixed with 1 tbsp ground flaxseed) (or substitute with 1 egg white for non-vegans)
- 2 tbsp molasses

Directions
Preheat the oven to 350°F.
Make the flax egg by mixing 3 tbsp of water with 1 tbsp of ground flax.
In a separate bowl, combine all the dry ingredients.
Cube the vegan butter into small chunks.
Using your fingertips, rub together the vegan butter and the dry ingredients.
Mix the flax egg with the molasses, then add to the dry ingredients.
Mix the ingredients into a ball of dough.
Roll out the dough to a thickness of 1-2 inches and cut it into your desired shapes.
Bake for 6-8 minutes.
