These plant-based protein scones are absolutely delicious. We think they actually taste better than regular scones. They are packed with protein, naturally sweetened, and perfect with jam!
Ingredients
- 3 cups flour
-
1 cup (4 scoops) Thrive Plant-Based vanilla protein powder
- 1 tsp soda
- 4 tsp baking powder
- 1 cup natural sweetener (monkfruit / stevia / erythritol)
- 1 pinch salt
- 1 cup raisins (best soaked in water overnight)
- 6 tbsp vegan margarine
- 500 mL Vegan buttermilk (500 mL soy milk mixed with 1 tbsp vinegar or lemon juice)

Directions
Preheat the oven to 400°F
Line a baking tray with baking parchment
Mix all dry ingredients together
Add margarine and blend with a pastry blender or fork
Add the soaked raisins
Pour in the buttermilk (leave a small a small amount of buttermilk aside for brushing). If the dough is too sticky, add slightly more flour (the dough should be moist but rollable)
With a rolling pin, roll the dough out to 1.5" - 2" thick on a floured surface
Cut biscuits using a cutter or a glass
Brush with buttermilk
Bake at 400°F for 16 minutes on parchment paper
Serve and enjoy!
