These cookies are so delicious, you'll want to make them time and time again. Packed with protein, super soft, naturally sweetened, and plant-based. You can also tweak the recipe to make oatmeal raisin cookies, or double chocolate!
Ingredients

¾ cup of Thrive Vanilla Plant-Based Protein

½ cup All-purpose flour
- 6 tbsp of natural sweetener (stevia, erythritol, or monk fruit)
- 1/3 cup chocolate chips
- 1/2 tsp of baking powder
- Wet Ingredients:
- 6 tbsp of melted vegan butter (can substitute with coconut oil)

8 tbsp aquafaba (can substitute with an egg white)
- 1 tsp vanilla extract

Directions
Preheat oven to 350°F.
Line a baking tray with baking parchment.
Mix all the dry ingredients together and whisk to combine.Gently melt the vegan butter.
Add all of the wet ingredients into the dry ingredients and combine.
The dough should be soft and moist; if it's dry, add some additional plant milk until it's soft.
Shape the dough into balls, press them down into cookie shapes.
Bake for 10-12 minutes
Serve and enjoy!
Recipe Note
This recipe works great for a variety of different types of cookies:
- For oatmeal raisin, substitute chocolate chips for 1/3 cup of raisins and add 1/4 cup of oatmeal.\
- For double chocolate, add 3 tbsp of cocoa powder and an extra 2 tbsp of aquafaba.
