Vegan Protein Banana Bites
Super soft, and naturally sweetened, these cake-like bites are so good! They make for the perfect pre or post-workout snack.
Recipe
Ingredients:
Dry Ingredients:
- 100g Thrive Vanilla Plant-Based Protein
- 60g All-purpose flour
- 5 tbsp of natural sweetener (stevia, erythritol, or monk fruit)
- 1 tsp baking powder
Wet ingredients:
- 2 medium overripe bananas (mashed)
- 6 tbsp of coconut oil
- 2 tbsp aquafaba (or 1 egg white)
Instructions:
- Preheat oven to 350°F.
- Line a baking tray with baking parchment.
- Mix all the dry ingredients together and whisk to combine.
- Gently melt the coconut oil.
- Mash the bananas until smooth.
- Mix the coconut oil, banana, and aquafaba together and whisk to combine.
- Add the wet mix into the dry ingredients and combine.
- Shape the dough into bite sized balls, and bake for 12-14 minutes
- Serve and enjoy!
