This recipe is seriously good! It’s super quick and easy, with 10g of protein per pancake, less than 130 calories, and they taste amazing! You don’t rest the batter, so they only take 10 minutes to make! They are filling, protein-packed, and sugar-free, making them one of our favourite go-to snacks
Ingredients
-
1 cup all purpose flour
-
½ cup (1.5 scoops) Thrive Vanilla Plant-Based Protein
-
1 ¼ - 1 ½ cups (300 - 360ml) plant-based milk
-
5g natural sweetener (stevia or monk fruit)
- 1 tbsp baking powder
- 1/4 tsp salt
- Coconut oil (for cooking)
Directions
Mix all the dry ingredients together in a mixing bowl
Add milk and whisk until the batter forms a thick, but pourable mixture.
Heat a non-stick frying pan to medium heat, we don't want the pan too hot for these, otherwise the outside will burn before the inside cooks.
Add coconut oil to the pan and then add 1/6 of the batter and cook for 1-2 minutes, then flip over and cook for another 1-2 minutes.
Keep flipping them over every 30 seconds until cooked; give them a poke to tell if they are cooked through. It takes 3-4 minutes to cook them through.
Serve with toppings of your choice! We have ours with all sorts of things: Bananas, Jam, Honey, Peanut butter - whatever you like!
