Baking with protein can be tricky sometimes, but we found that this brownie recipe strikes the perfect balance between taste, texture, and healthy ingredients.

Vegan Protein Brownies

Ingredients

    • 1 cup of spelt flour (125g) (can also use plain flour)

    • ⅓ cup of cocoa powder (50g) (or raw cacao powder)

    • ¼ cup of Thrive Plant-Based Chocolate Protein Powder

    • 15g of Stevia

    • ¼ cup (60g) melted coconut oil

    • ½ a cup (120ml) coconut milk

    • 1 flax egg (1 tbsp ground flax, 3 tbsp water; let sit for 5 min)
    • 2.5 tbsp (40g) of peanut butter (or soy butter)

    • 1 tbsp (15g) agave nectar (or honey)

    • 20g cacao nibs
    • 20g dairy-free chocolate chips (optional)

    Directions

    1. Preheat Oven: Preheat the oven to 350 degrees F.

    2. Prepare Pan: Line a 8-10 inch square or round tin with parchment paper.

    3. Make Flax Egg: Prepare the flax egg by combining 1 tbsp ground flax with 3 tbsp water. Let it sit for 5 minutes before using.

    4. Mix Dry Ingredients: In one bowl, combine spelt flour, cocoa powder, chocolate protein powder, and stevia.

    5. Mix Wet Ingredients: In another bowl, mix melted coconut oil, coconut milk, flax egg, peanut butter, and agave nectar. Add the flax egg last.

    6. Combine Wet and Dry: Add the wet ingredients to the dry ingredients, mixing well. Then add the Add cacao nibs and chocolate chips.

    7. Press into Pan: Press the mixture into the prepared pan, spreading it evenly. The mixture should be around 2-3 inches thick.

    8. Bake: Bake in the preheated oven for 12-14 minutes.
