HEALTHY VEGAN PROTEIN BROWNIES
SERIOUSLY TASTY PROTEIN BROWNIES.
RECIPE
Ingredients:
Dry Ingredients:
- 125g spelt flour (or plain flour)
- 50g cocoa powder (or raw cacao powder)
- 20g Plant-Based Chocolate Protein Powder (Thrive)
- 15g of Stevia
Wet Ingredients:
- 60g melted coconut oil
- 120g coconut milk
- 1 flax egg (1 tbsp ground flax, 3 tbsp water; let sit for 5 min)
- 40g peanut butter (or soy butter)
- 15g agave nectar (or honey)
To be added at the end:
- 20g cacao nibs
- 20g dairy-free chocolate chips (optional)
Instructions:
- Preheat Oven: Preheat the oven to 350 degrees F.
- Prepare Pan: Line a 8-10 inch square or round tin with parchment paper.
- Make Flax Egg: Prepare the flax egg by combining 1 tbsp ground flax with 3 tbsp water. Let it sit for 5 minutes before using.
- Mix Dry Ingredients: In one bowl, combine spelt flour, cocoa powder, chocolate protein powder, and stevia.
- Mix Wet Ingredients: In another bowl, mix melted coconut oil, coconut milk, flax egg, peanut butter, and agave nectar. Add the flax egg last.
- Combine Wet and Dry: Add the wet ingredients to the dry ingredients, mixing well. Add cacao nibs and chocolate chips.
- Press into Pan: Press the mixture into the prepared pan, spreading it evenly. The mixture should be around 2-3 inches thick.
- Bake: Bake in the preheated oven for 12-14 minutes.
